Chef David Kinch is opening The Bywater in Los Gatos on Jan. 12.

Manresa chef/owner David Kinch will open a Los Gatos eatery inspired by his hometown of New Orleans in early 2016.

The Bywater, which opens Jan. 12, is Kinch's first foray into a casual restaurant in the South Bay; Manresa's prices hover at close to $200 per person for a tasting menu.

The menu puts California twists on city signatures such as po'boy sandwiches with fried oysters, homemade hotlinks or shrimp, Creole shrimp and grits and pork chops with black-eyed peas, with a raw bar showcasing oysters not often seen in this region, including Pemaquid, Grassy Bar and Rappahannock varieties.

The intimate 30-seat restaurant with a 10-seat bar and 20-seat outdoor patio will serve lunch and dinner in January, with weekend brunch to follow in February.
