Nine-year-old San Francisco citizen Aria Pelaez, who was named California's winner of Michelle Obama's Healthy Lunchtime Challenge in July, will make her winning dish at an acclaimed SF restaurant next week.
Pelaez will join chef Matthew Dolan to cook her winning California Rainbow Taco with Mic-Kale Obama Slaw and Barack-amole when it appears on the dinner menu for one night at Twenty Five Lusk on October 16.
"I was inspired to make this recipe because my family makes bland tacos," she said in the notes for her recipe on the Healthy Lunchtime Challenge site. "I took leftover BBQ pineapple, tomato, orange peppers, and red onions and made a taco with them. I added grilled fish and I made a guacamole yogurt sauce to give it a strong taste."
