French Laundry Taunts Per Se With Virtual Produce

CNET has this titillating slideshow of the kitchens and state-of-the-art equipment at Thomas Keller's French Laundry in Yountville and Per Se in New York.

It includes behind-the-scenes glimpses of his geothermal air-conditioning system, Fresh Nordaq filtration technology and even the vacuum-sealing machine used to prep for sous vide cooking. But perhaps the most interesting snippet discloses the cross-country rivalry taking place over Keller's videoconferencing system, set up so that the kitchen staff at both restaurants can "see what the others are working on, and...greet each other."

But that's not all it's good for: "The California staff likes to use the videoconferencing system to taunt their New York City colleagues with the fresh vegetables from the French Laundry's large outdoor garden and greenhouse." Because everybody knows the NorCal has quite the reputation for nice fruit.
