Absinthe executive chef Jamie Lauren is one of many Bay Area culinary stars featured in the new book Sexy Dishes.

But the producers are not only looking for a chef who can cook, they are also searching for people who have a personality and "oodles of charisma." Watching a mute cook doesn't get ratings.

Contestants are asked to fill out an application and put together a video demonstrating some personal flair before coming to the open audition. The producers will tour the country before picking a handful of chefs who will compete on Top Chef 7.
