A Quebec restaurant critic found Thomas Keller's foie gras too salty, to which Keller suggested that Canada doesn't salt properly, to which the critic said that Keller fellow doesn't know what he is talking about: "Keller's claim that we Quebecers favour bland food is off the mark, for salting is not so much regional trend as personal preference. In the highest realms of cooking, salting is not even that: It's about boosting, not drowning out, the host ingredient.
