Haute Pot Roast Boast at Citizen's Band

Chris Beerman offers the comfort of pot roast topped with a brace of grated horseradish during the colder months at his San Francisco restaurant Citizen's Band, which opened back in July. He combines the fine dining techniques he learned as a saucier at Boulevard with his own instincts for flavor depth to achieve this popular, mind-meltingly good slab of meat.

Beerman says he was compelled to include pot roast on his menu because there are not many places in the Bay Area that do it well. That being said, he does have praise for the Italian-style pot roast at Hanna's in San Rafael and the sauerbrauten (German equivalent) at Gourmet Haus Staudt in Redwood City. [The Feast]
