Purgatorio: How to Get the Secret Pizza at Pizzeria Delfina

Diners at the popular Bay Area Pizzeria Delfina restaurants are encouraged to look beyond what's on the menu.

In fact, there is at least one off-menu special that can be ordered by name: Purgatorio.

As with the advertised pies, the Purgatorio starts with a thin, Neapolitan-inspired crust dotted with what pizzaiolos call leopard spots. Then, it starts to resemble the famous "eggs in purgatory dish," with two farm eggs baked on top of spicy tomato sauce, mozzarella and shards of Pecorino Romano.
The pie's cover has been blown by the San Francisco arm of the delivery service Caviar, which has added the item to a "Summer Secret Menu", featuring several San Francisco restaurants presenting off-menu items for citywide delivery over the next few weeks for those wanting to bypass in-person waits.
The Purgatorio is also expected to remain an off-menu special at Pizzeria Delfina's restaurants in San Francisco, Burlingame and Palo Alto for the same time.
