Amid swirling Iron Chef rumors, Nate Appleman—or as he's now known, "the David Chang of the West Coast"—takes a moment with Slashfood, to talk shop on issues like Urbino, chef idols (Alice and Fergus), the value of salt, and the dangerous road ahead for young cooks too preoccupied with molecular gastronomy:

"I think you are getting too many young kids who are not doing the basics and doing this newfangled cuisine and I think it's going to create really bad cooks in the future."
