Forget Iron Chef, the granddaddy of all pig-centric competitions might be Amuse Cochon, which takes place November 2nd at Napa's Silverado. The tagline, "5 Chefs, 5 Pigs, 5 Winemakers" pretty much says it all: five local chefs will each prepare a 70-pound heritage pig from head to toe, and judges/guests will determine a winner based on creativity, classic preparation and overall best flavor. The big-name participants are as follows: Taylor Boetticher (Fatted Calf), Ryan Farr (Orson), Chris Cosentino (Incanto), Allan Benton (Benton Hams) and Peter Pahk (Silverado Resort). P.S.
