Forget Iron Chef, the granddaddy of all pig-centric competitions might be Amuse Cochon, which takes place November 2nd at Napa's Silverado. The tagline, "5 Chefs, 5 Pigs, 5 Winemakers" pretty much says it all: five local chefs will each prepare a 70-pound heritage pig from head to toe, and judges/guests will determine a winner based on creativity, classic preparation and overall best flavor. The big-name participants are as follows: Taylor Boetticher (Fatted Calf), Ryan Farr (Orson), Chris Cosentino (Incanto), Allan Benton (Benton Hams) and Peter Pahk (Silverado Resort). P.S. Restaurant folks, there's an industry discount as well. But you didn't hear it from us. More info here. [EaterWire]
