Make a Sustainable Summer Cocktail
California Live’s Malou Nubla visits Alley and Vine, a farm in Santa Rosa that has created a ‘World Peas’ cocktail using English Peas right from the garden. Francisco Bazo, the Beverage Director for Alley and Vine shows Malou how to make this sustainable beverage. Find the recipe below.
-WORLD PEAS COCKTAIL
• 2 oz Roku Gin
• ¼ oz Lo-Fi Sweet Vermouth
• ¾ oz Lemon Juice
• ½ oz Simple Syrup
• 1 Tablespoon Fresh English Peas
• 1 Egg White
-INSTRUCTIONS
1. In a cocktail shaker, muddle peas and vermouth.
2. Add gin, lemon juice, simple syrup, and egg white. Add ice (LOTS of ice! Ice is the key to a good cocktail…) Shake hard for 30 seconds.
3. Discard ice. Dry shake the liquid for an additional 30 seconds to make it frothy and voluminous.
4. Double strain into a pre-chilled coupe.
5. Garnish with a pea tendril.
