Traditional French-style Caramels Handmade in California

Le Bon Garçon founder Justin Chao shows California Live Correspondent Laila Muhammad how to whip up the perfect, tender, buttery handmade caramels. He unveils his newest caramel flavors just in time for Valentine’s Day. RECIPE: Le Bon Garçon Salted Caramels Ingredients 1.5 cups of brown rice syrup 2.75 cups of sugar 1.5 cups of water 3/4 cup of milk 1.25 cups of cream 2 sticks of butter melted 1.5 tsp of salt 1. Cook brown rice syrup, sugar and water to 300 degrees Fahrenheit 2. Let the sugar continue to darken in the pan until it is a dark copper color 3. Combine cream, milk, melted butter and salt 4. Add cream combination slowly to the cooked sugar while stirring slowly with a whisk. Be careful because the hot sugar will spurt when the liquid is added. 5. Once all the liquid is incorporated, continue to stir the caramel until it reaches 248 degrees Fahrenheit. 6. Pour into square mold and let cool 7. Sprinkle top of caramel with Maldon salt 8. Cut into small squares and wrap in wax paper or cellophane
