Why not grab yourself a watermelon and about 500 rubber bands!
Gav and Dan of "The Slow Mo Guys," who record videos at an extremely high frame rate, shot this one of them wrapping rubber bands around a watermelon until it explodes. They found about 500 will do the trick.
The slo-mo is quite impressive. If you want to skip right to the explosions, head to around the 1:00, 2:35, and 3:40 marks.
